Slow Cooker Sesame Honey Chicken

Any meal that you can cook in a slow cooker is a favourite meal in my books. They’re so easy, and packed full of flavour. Plus they help you make meals that seem fancy but are actually really easy (lamb shanks for example). And if you’re busy during the day you can put a meal on in the morning, go about your business, and when you get home viola! dinner’s ready.  I found this sesame honey chicken recipe on Skinny Taste and it sounded perfect.

There are a few days during the week where, come dinner time, I’m the only person in the house. My parents are both quite sporty (ugh sports), and slow cooker meals are perfect for those evenings when they’re out paddling or running or gym-ing. All I have to do is make up the components of the meal and then as people come home they can put together their dinner. It makes life easier for everyone involved. I put this in the slow cooker around lunch time, and turned to warm when it was finished cooking so every could grab some when they were ready without having to reheat it.

Mix the soy sauce, honey, tomato paste, vinegar, garlic, 1 tbsp water, sesame oil, and onion together in a bowl to form the sauce.

Put the chicken in the slow cooker, season with pepper, then pour the sauce over top. Cook on LOW for 3-4 hours. Shred the chicken with two forks (It is easier to take the chicken out of the slow cooker to shred it). Dissolve the cornflour in the 1/4 cup of water, and mix it into the sauce. Turn the slow cooker to HIGH for 15-20 minutes, or until the sauce thickens slightly. Return the chicken to the slow cooker and mix it through the sauce.

This is delicious over my special fried rice, or with just about anything else. Apologies for the quality of the photos. My camera has been acting up lately 😦

 

Ingredients (serves 4 ish)

  • 500g (ish) of boneless chicken thighs (if you have chicken breasts use those instead)
  • black pepper, to taste
  • 1/3 cup of soy sauce (I used ‘superior dark’ soy sauce because that’s all we had)
  • 1/4 cup of honey
  • 1/4 cup of tomato paste
  • 3 tbsp of white wine vinegar
  • 2 tsp of minced garlic
  • 1 tbsp of water
  • 1 tsp of sesame oil
  • 1 small onion finely diced
  • 1 heaped tbsp of cornstarch
  • 1/4 cup of water

Method
