Mexican inspired Brown Rice Casserole

Over the past few weeks I’ve seen quite a few recipes floating around for rice base casseroles. Mum and I have recently fallen in love with brown rice, so I thought why not give a rice casserole a try with our new favourite food. None of the recipes I found seemed quite right (not enough vegetables, ingredients we didn’t have, too much cheese) so this recipe is an amalgam of several different sources.

As anyone who has tried to cook brown rice knows it takes forever, so make sure you put the rice on first. Preheat the oven to 180°C. While the rice is cooking use a food processor to finely shred the cauliflower. Tip the cauliflower into a microwave safe bowl and microwave on high for  2 minutes. While the cauliflower is microwaving you can start cooking the vegetables. Cook the onions and capsicum in the spices until they start to soften. Then add the cabbage and carrot and cook until the carrot is cooked and the cabbage has started to wilt.

When the rice is finally cooked mix together the cooked vegetables, cauliflower, and cooked rice and pour the mixture into a casserole dish. Top with cheese and cook in the preheated oven for thirty minutes or until the cheese is cooked to your satisfaction.

Ingredients (serves 3-4)

  • 1 cup of brown rice
  • 1 head of cauliflower
  • 3 capsicums, roughly chopped
  • 1 brown onion, roughly chopped
  • 1 carrot, grated
  • 1/2 a head of red cabbage, shredded.
  • 1 tsp of paprika
  • 1 tsp of cumin
  • 1 tsp of ground coriander
  • 1/2 tsp of cayenne pepper
  • Cheddar and Parmesan cheese to top.

Method

  1. Put the rice on first.
  2. Preheat the oven to 180°C.
