Strawberry and Chia jam

I really like making my own jam. Unfortunately to make jam at home you have to use a heap of sugar. So for a while now I’ve been looking for no, or low sugar recipes, and then I found this one

While this jam certainly has lots of natural sugars from the strawberries and the honey, it has no added refined sugar! And it was so simple to make. First up, chuck your berries in a pot and mash them around a bit. Then put the pot on a medium heat, and bring the berries to a boil. Then reduce then mixture to a simmer until the berries soften completely and can be further mashed into a runny jam-like consistency. DSC_0003.jpg

Then stir in your honey, chia seeds, and lime juice. Continue to simmer the mixture, stirring regularly until it thickens. It should take about five minutes. Allow the mixture to cool a little, then pour it into a clean glass jar. Store it in the fridge for up to two weeks, and enjoy it on your toast, or your muesli.

Ingredients

  • 500g of strawberries, or berries of choice
  • 2-3 tbsp of honey
  • 2 tbsp of chia seeds
  • 1 tsp of lime juice

Method
