Tequila Marinaded Steak Fajitas

This recipe is wildly different from its source recipe. Mostly because the app I had the recipe saved in needs the internet to work so it could only give me to name of the recipe and the ingredients.

Find  a baking tray big enough to fit all your steak then add all of the ingredients, except for the cornflour, and mix them together. If you’re leaving out the tequila I recommend added some extra lime juice so that there’s still the same amount of liquid. You’re supposed to let it marinade for a while, but sometimes I forget and it’s still yummy so don’t worry too much if you don’t have the time. Alternately, you can prepare it in the morning before you go to work and leave it to marinade all day.

Even if you don’t have time to let it marinade for long, just chuck it in the fridge for ten minutes or so as you prepare the veggies and rice and stuff to go with it. Once that’s done just pour the steak and marinade into a hot frying pan and cook until the steak is nicely browned. The first time we had this steak we had it in fajitas so I added some cornflour to the marinade just before I cooked it to make the sauce nice and thick. However this time we had it with stir-fry veggies and rice so I didn’t add the cornflour.

Ingredients

  • 400g steak, cut into strips
  • 2 1/2 Tbsp of Worcestershire sauce
  • 1 shot tequila (optional)
  • Juice from 2 limes (approx. 2 tbsp)
  • 1 clove of garlic, minced
  • 1/2 tsp of jalapeno salt
  • 1 tsp if ground black pepper
  • Handful of chopped coriander
  • 1 tsp of cornflour (optional)

Method

  1. Find  a baking tray big enough to fit all your steak then add all of the ingredients, except for the cornflour, and mix them together. If you’re leaving out the tequila I recommend added some extra lime juice so that there’s still the same amount of liquid.
  2. Put it in the fridge to marinade for however long you like (I normally go for a few hours or ten minutes if I’m feeling forgetful).
  3. Once that’s done just pour the steak and marinade into a hot frying pan and cook until the steak is nicely browned. If you want to turn the marinade into a sauce to go with the steak mix in the cornflour before cooking.
  4. Serve as a fajita, or with veggies and rice.
