Slow cooker Santa Fe chicken

 

Some times I don’t feel like cooking. On days when I can feel that I wont want to cook by the time dinner rolls around, our slow cooker is my savior. You just chuck everything in when you still have the motivation, and let it cook away until dinner. This Santa Fe chicken is a delicious meal that feels like it should have been time-consuming, but really wasn’t. 

This recipe is from here. Chuck everything except for the chicken in the slow cooker and give it a good stir.

Stick the chicken on top, put the lid on, and you’re done. Cook on high for about six hours, or low for ten. Before you serve it take the chicken out of the slow cooker, shred it, and stir it into the mixture.

I served mine with lime and coriander rice.  If you’re going to serve it with something else I recommend adding more coriander to the chicken.

Ingredients

  • 500g of chicken breast (or thigh, but breast is best)
  • 1 400g can of diced tomatoes
  • 1 400g can of black beans, rinsed and drained
  • 1 400g can of corn kernels
  • 2 tbsp chopped fresh coriander
  • 400mL of chicken stock
  • 1 tsp of minced garlic
  • 1 small onion, chopped
  • 1 tsp cumin
  • 1 tsp cayenne pepper (to taste)
  • salt and pepper to taste

Method
