Breakfast Guacamole

I thought I’d share my recipe for breakfast guacamole. I use it as a delicious breakfast spread on toast, but you can also use it as a base to make guacamole for a party.

This recipe is super easy. Scoop out the insides of an avocado (throw out the seed first) into a bowl. Add about a teaspoon of minced garlic, you can add more or less depending on how much you like garlic. Grind some sea salt and black pepper into the bowl, and add the juice of one lime.

Mash it all up with a spoon. You want to make sure there are no big chunks and everything is mixed together properly, but it doesn’t need to be perfectly smooth.

It’s now ready to spread on whatever you want: toast, sandwiches, bagels, pizza etc.

Keep it in the fridge if you don’t use it all straight away. It’ll start to go a bit brown in the fridge after a few days, but you help keep the brown away by covering it with cling film and pushing the cling film down to touch the guacamole.

Ingredients

  • 1 large avocado
  • 1 tsp of garlic (adjust for taste)
  • the juice of one lime (about 1-2 tablespoons)
  • salt and pepper to taste
  • optional: 1 tsp of coriander, 1 red capsicum diced small, 1 tomato diced small, half an onion (preferably red) diced small or a spring onion chopped finely, diced chilli.

Method

  2. Add about a teaspoon of minced garlic (you can add more or less depending on how much you like garlic).
  3. Grind some sea salt and black pepper into the bowl.
  4. Add the juice of one lime.
  5. Mash it all up with a spoon. You want to make sure there are no big chunks and everything is mixed together properly, but it doesn’t need to be perfectly smooth
  6. OPTIONAL: If you want to spice it up a bit, or to make it into a guacamole dip to take to a party add your choice of:  1 tsp of coriander, 1 red capsicum diced small, 1 tomato diced small, half an onion (preferably red) diced small or a spring onion chopped finely, diced chilli. I tend to go for the coriander, capsicum, and spring onion, but it’s up to you. You can also adjust how much extra stuff you want to put in according to your tastes.
