Lime and Coriander rice

I already posted the recipe for this with my chicken burritos, but I love this rice and use it whenever I can so I thought I’d give it its own post.

So put some rice on however you normally cook rice. When we cook rice¬†we tend to use the absorption method. The Jamie Oliver method is normally pretty reliable. We put one cup of rice and two cups of boiling water in a saucepan, boil it on high for seven minutes with the lid on, then turn the heat off leave the lid on and let it steam for at least another seven minutes. And if you’re worried about over cooking the rice turn the heat off a little early, but leave the lid on until you’re ready to use it and the steam will finish cooking it. Fluff it up a bit with a fork and you’ve got perfectly cooked rice.When the rice is cooked add the lime juice and the coriander and stir them through the rice. Put the lid back on and let the flavours steam through the rice while you finish off whatever else you’re cooking. Now you’ve got lovely lime and coriander rice.

Ingredients

  • 1 cup of rice
  • 2 cups of boiling water
  • 2 tbsp of lime juice
  • 1-2 tbsp of chopped fresh coriander.

Method

  2. When the rice is cooked add the lime juice and the coriander and stir them through the rice. Put the lid back on and let the flavours steam through the rice while you finish off whatever else you’re cooking.
